Paprika Chicken

This has a unique and wonderful flavor. Not to mention the color is really pretty. :) Even Nahum ate and enjoyed this meal! Typically I don't care to eat a big hunk of meat, even if it is chicken, but this I really enjoyed. Cooking in in a sauce makes the chicken really moist! This meal is pretty easy to make. Not a lot of chopping or mixing etc....you mix a little bit and then let it go for about 25 min. Hope you like it!

INGREDIENTS

1 1/2 lbs organic chicken breast
3/4 tsp salt
1/2 Tsp freshly ground pepper
1 Tbs coconut oil
5 finely diced shallots
3 cloves garlic chopped
2 tbs tomato paste
2 tbs paprika
1 tsp crushed red pepper
1 tsp dried oregano
1 tsp dried dill
1/2 tsp salt
1/2 tsp black pepper
3 C chicken broth
1/2 C plain Greek yogurt

DIRECTIONS

Cut shallots and garlic. Saute in oil in a large skillet until slightly soft (3 min) Add salt, pepper, tomato paste, paprika, crushed red pepper, oregano, dill and broth. Whisk together well. Salt and pepper the chicken and place in the skillet. Cover and let cook on medium heat for 25 min or until chicken is cooked through. Remove chicken and whisk in Greek yogurt. Serve over whole wheat pasta, pouring the pan sauce over the chicken and the noodles.
